Biokult Grüner Veltliner
By “asparagus wine” we don’t mean it’s made from fermented asparagus; rather, it pairs well with asparagus. Grüner Veltliner — or Groovy, as some of the cool cats have been calling it for a few years — is pretty Groovy to drink. You don’t have to have a disco ball, wear bell bottoms, and have the Bee Gees playing in the background to be Groovy here, although that could be a fun night, too. Especially if you have the wine.
The great thing about Grüner, other than being pretty groovy, is its versatility. It is dry, bracingly crisp, and super food-friendly. It pairs well with just about everything, from cheese to veggies to pork, chicken, fish, and especially with hard-to-pair foods like artichokes and asparagus.
